Activities: Day Passes at an All-Inclusive

WILLEMSTAD, CURACAO – Since this trip to Curacao was extra special as I was celebrating my 30th birthday and as a solo traveler I also had to budget my time and money. I wanted the ‘unlimited’ drinks experience you can get at an all-inclusive. So Sunday afternoon, I went to the Acoya Hotel where I purchased a $65 dollar night-pass where you can have unlimited food and drinks. I had several drinks, a late lunch at the bar and a dinner at the Lakeside Grill restaurant. I really enjoyed my time at Acoya and definitely would’ve booked my stay there if I had a little bit more money. 

Saturday was my actual birthday and Avila Beach Hotel kindly gave me a beach day pass for that day. I explored the property and spent about 4 hours there before making my way to my dinner reservation.

Lifestyle: Recipe – Mexican Street Corn and Homemade Tortillas

Seems like it’s been awhile since I posted a recipe! Sorry about that! I have gotten a lot of new cooking inspiration  lately and been indulging in that. My parents gifted me the Ninja Foodi 4-in-1 Grill for Christmas so I’ve been enjoying grilled food in my apartment! Once I have a worthy recipe to post I will. I’ve mostly been enjoying burgers and salmon. Today I have a meal combo I couldn’t resist posting about. I adapted thestayathomechef’s Mexican Street Corn soup, thickened it up and put it on homemade tortillas!

Ingredients

  • 4 tablespoons butter
  • 1 small white onion chopped
  • 1 jalapeno minced
  • 5 cloves garlic crushed
  • 3 tablespoons flour
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken stock
  • 6 cups frozen corn kernels
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1 1/2 cups heavy cream half and half, or milk
  • 1 cup freshly chopped cilantro

Toppings:

  • 1/2 lb bacon cooked and crumbled
  • 1/2 cup crumbled cotija cheese
  • 1 jalapeno sliced

Instructions

  • Melt the butter in a large saucepan over medium high heat. Add in the onions and minced jalapeno and sauté for about 5 minutes, then stir in garlic and cook an additional 1 minute.
  • Stir in the flour, cumin, and chili powder and cook 1-2 minutes. Whisk in the chicken stock until smooth and bring to a boil. Add in the corn, sugar, and salt. Once it returns to a boil, reduce the heat to low and simmer 10 minutes.
  • Stir in cream and cilantro. Serve topped with crumbled bacon, cotija, and jalapeno slices.

Realize: Colegio Nechi Pieterz

WILLEMSTAD, CURACAO – After my snorkeling tour since it was a one-on-one session I had gotten to know the tour guide who told me a bit about his charity work he was doing for a local school after learning that I work in grocery and at a community grocery store in social media. I do not think it’s a coincidence that I met him and my boss loved his story. After raising the initial money for the school to restore it and rebuild the kitchen he is doing a heritage/cultural challenge by kayaking from Amsterdam to Curacao since that is how his family came over to the island. This school is for children from broken, abusive, and toxic families and is working on turning it also into an oasis for them to escape. He wants me to help with the social media promotion part on his challenge so it could lead to a paid gig. But this story/experience certainly fits under the ‘realize’ category of my blog! Below are the pics from a brief tour of the school and meeting the principle. 

Kolegio Nechi Pieters is a Roman Catholic school and comes under the Central Roman Catholic School Board Foundation (RKCS). The school was founded in 1977 and is located in the Buena Vista district. The school was first called “Santa Martha School”. In February 1977 the Roman Catholic School Board changed the name to “Jozef Cornelius Nechi Pieters” or Nechi Pieters. The name chosen for a school is that of a talented teacher who has worked in education for more than 40 years. Besides being a teacher, Nechi is also a gifted painter. The choice of the Roman Catholic School Board to rename the Santa Martha school in Kolegio Nechi Pieters is related to the fact that Nechi Pieters was a good example for children and to keep remembering him as a a good teacher and painter.

 

 

Personal Wellness at The Stonehedge Hotel Spa

TYNGSBOROUGH, MA – Continuing my personal wellness series, I did go to a Spa in November however I’ve just been so busy with the holidays that I haven’t had a chance or frankly motivation to post. But now I have and can post a few pics. Honestly I don’t have much to say other than it was a super casual but affordable experience. The food wasn’t really much to rave about and was a bite to eat but in a pinch it worked.

 

Personal Wellness at a Hillside Town Spa

LEE, MA – I have been on a personal wellness quest and figuring out the best anxiety and pain management for myself. So far I have discovered water or hydrotherapy does wonders for me. During the summer lakeside beaches really are a huge benefit but they are not open year around. I found a place recently that offers holistic baths which are a nice option because hot tub therapies usually require at least two people, which makes it awkward for myself. I was a bit early to my appointment so I explored Lee. A few years ago I visited a cafe that was known for their crepes, ironically called the Starving Artist Cafe but they were unfortunately closed. I took a few photos, so here they are from my experience.

Lifestyle: Travel – Herring Cove Beach Provincetown, MA

PROVINCETOWN, MA – Today my family and I went to Herring Cove Beach in Provincetown. I am on the cape for Labor Day weekend and got lots of fun activities planned. We stopped at the beach to check out the restoration that was done after some damage from a storm awhile ago. These pictures are a reflection of that. They constructed a nice rest area with a concession stand and built up the beach and parking. After that we walked through downtown, ate lunch at Bubala’s, a favorite restaurant of ours. Before heading back I went to Wampum, etc. and purchased a replacement wampum ring finally. I had one a few years ago that broke overtime. Overall a really fun and relaxing day, perfect weather too!

 

Personal Wellness at a Lakeside Beach

BELCHERTOWN, MA – I initially got my apartment here because of several things, most I am sure most people wouldn’t have considered. One of these amenities is a public beach not too far (walkable) distance from my apartment. However, I have been here two years and this month it was my first time visiting. While a little small, it was a quiet place to getaway for a little bit. They also had a concession stand and some amenities (bathrooms, and boat launch). Earlier this month I took a few photos and was excited to learn they will remain open throughout September!

 

 

Lifestyle: Apothecary – Yarrow

This past winter I had a Soul Path reading with Winifred at AwenTree as part of my healing journey. The reading was very insightful and confirmed some of the things I had been seeing personally. One of the things Winifred suggested was to see an herbalist in town and to get a consultation. One of the things that have struck me is how much my third-eye has a play in all of this – although not too surprising.

I often feel alone in my daily life challenges due to a lot of coming from a spiritual nature. Most of the time people understand only fractions of what I’m going through. Seeing this herbalist was the first time someone could understand on some level what I am going through. He combined both western and eastern practices as well as deeply spiritual anecdotes. I recalled my experience in Salem where my third-eye shut off completely during a shift and how traumatizing it was. The herbalist provided another perspective and that my third-eye shut off due to protection. This was an eye-opener (no pun intended) and led to another discussion about providing more spiritual protection in my day to day life.

I was also reminded that the pineal gland is connected to the endocrine system in the body which is said to house the third-eye and our connection when someone goes into the fight or flight tendencies from a PTSD episode our endocrine system becomes exposed to the adrenaline and when our endocrine system is exposed to these adrenaline energies for too long it causes inflammation to the body. If you can find ways to reduce inflammation it will in turn reduce effects of anxiety and PTSD. I’m not saying this is the treatment for all of PTSD disorders but it’s a huge aspect of it. For me being completely ‘open’ spiritually I was ‘inhaling’ all kinds of excess energy especially in an office setting – interpreting others’ energy as my own and seeing myself in them. One of the things that was suggested by the herbalist is to take Yarrow for negative energy and spiritual protection. I’ve done a lot with protection but it seems like my techniques aren’t serving me anymore so I’ve been on a quest to finding other healing techniques.

  1. Perhaps the most popular use for yarrow is as a sweat inducer. A cup of yarrow tea can help you break a sweat, which in turn can help break a fever.
  2. Among yarrow’s many folk names, it is also called nosebleed, and by no coincidence. Not only can yarrow cause nosebleeds, it is an effective remedy for against them. Simply take a yarrow leaf, squish it a little to release its aroma and therapeutic oils, roll it into a ball and use this to plug the nostril(s) that is bleeding.
  3. When suffering from hemorrhoids drink yarrow tea, or use a yarrow poultice on the affected area.
  4. When it comes to issues of the blood, yarrow is a powerful balancer, especially when it concerns the menstrual cycle. Yarrow is often used to start a menstrual cycle that is arriving late, as well as ease the flow of a heavy cycle. For these same reasons, pregnant women should not ingest yarrow.
  5. Yarrow is Nature’s bandage. Folk names like Soldier’s Woundwort and Knight’s Milfoil hint at its history as a sort of first aid kit in the midst of battle. Yarrow leaves can be used to pack a wound and stall its bleeding. They also have antibacterial qualities to help keep the wound clean of infection.
  6. Using yarrow to wash your hair is believed to prevent baldness, although it won’t cure it if already balding.
  7. Yarrow encourages the body to sweat, which can help break a fever. It assists the body in ridding itself of toxins, and a steam bath with yarrow in it can help relieve a headache.

Exploration: GeoHotel and Blue Lagoon

GRINDAVIK, IS – On my stop over on the way home in Iceland from Nuuk, Greenland I stayed at Geo Hotel in Grindavik. I ended up being super thankful for the transportation services offered at Geo Hotel as my flight from Nuuk was delayed half an hour and I missed my car rental pick up. 

If you are on your way or visiting Iceland Geo Hotel makes it super easy to travel to Blue Lagoon or to the airport via Blue Lagoon. It was easy to call them to schedule a pick up and then a ride to the Blue Lagoon transfer station. 

Due to miscommunication at Blue Lagoon I had missed my transfer bus to the airport but it ended fine as I had two hours at the airport to go and checkin and go through security. 

Geo Hotel offers a comfortable room at an affordable price within a quint town in Iceland. They also offer free breakfast starting at 6 am which allows enough time for a 7 am Blue Lagoon reservation. 

GeoHotel graciously extended a double room for my stay and I am happy to include them on this blog however I haven’t had the time to take pics of the room while I was there or explore the town as much as I would’ve liked so the pics posted to this blog are owned by GeoHotel.

Activities: What to Eat in Nuuk

Considering that Nuuk is more of a destination where people travel to with a purpose, it’s relatively small in regards to finding places to eat. However, I was able to find some ‘must dos’ from my planning that I WAS able to do. 

Cafétuaq in Katuaq

The first was Cafétuaq in downtown Nuuk at the cultural center Katuaq. From its’ website, “The café in Katuaq is an oasis of culture universe. The cafe is a meeting point for many, ranging from local families to tourists, artists and musicians who perform or exhibit in Katuaq. 

CaféTuaq serves a variety of hot and cold dishes, mostly based on Greenlandic ingredients, with a hint of flavors from around the world. All our dishes are prepared on order, so they retain optimum flavor and freshness, which helps to enhance the culinary experience. If one does not want to eat, you can also enjoy a selection of hot and cold beverages while reading the newspaper or just enjoy the art on the walls and the vibrant life passing by outside.” 

I had the Greenlandic Tapas dish which was a dish that had a variety of Greenlandic delicacies such as smoked salmon, white fish with caviar, smoked scallops, ox meat, fish sticks and a fish ball as well as reindeer meat. 

The second location is Inuk Hostels. The cuisine is surprisingly American but a much better version. Fresh meat and vegetables with a hint of European flavor. Café Inuk is a must for the views and the food.

We serve the season’s greenlandic specialities, like meat of reindeer, musk-ox, south greenlandic sheep and fish are served all the year.

Residency: Greenland Institute for Natural Resources

NUUK, GREENLAND – In summer of 2018, I had been working on my artwork and its’ pursuit and submitted my first scientific project to a natural resources institute in Nuuk, Greenland. I had NO idea what to expect and based on the information on their website it said they don’t accept all projects. I think I was pretty lucky to have my project accepted to study the plants and flora of Greenland in May.

The living situation at GINR is apartment-style and is equipped with a fully, functional kitchen, laundry and showers/bathrooms. It really did feel like I was back in college again living in a dormitory. Surprisingly, there were eventually quite a few other residents of all ages – mostly though of women my age.

In the room there is a bed, closet, dresser and big work desk that was easy to display my materials and work on. There was also a large window that faced the airport, a soft chair and a nightstand.

Nuuk, Greenland is surprisingly more western than I had anticipated despite being more remote. From my experiences so far, it seems that this might be due to the fact that tourism in general has become more popular, though Greenland is still quite difficult to get to.

Supposedly, there is a short window of time where the weather is best for flights. Flights occur all year around but are more risky due to the extreme weather conditions.

Food and drink have to be either shipped or flown into the island, no surprise there and many of the conventional provisions were of Danish origin.
